How to Measure the Spiciness 

Everyone has a version of what spicy means to them. So, how is a pepper named the spiciest in the world?

There is a scientific way of measuring the levels of spiciness of peppers. In 1912, Wilbur Scoville, an American Pharmacist, created measuring the spiciness of peppers through the Scoville Scale.

The Scoville Scale is a tool that measures the spiciness of the Pepper.

The scale quantifies the amount of capsaicin (a chemical compound in Pepper that makes it spicy) in Pepper.

A number, known as the Scoville Heat Units (SHUs), is then assigned as the rating of a pepper.

Capsaicin is typically found in the seeds and ribs of a pepper.

To learn the SHU of Pepper, use an alcohol extract of capsaicin from a dried pepper mixed with a water and sugar solution until a panel consisting of a human taste-tester can no longer detect the spiciness of a panel the Pepper.

This test was known as the Scoville Organoleptic Test.

If a pepper, for example, has a SHU of 500, that means the capsaicin extract from the Pepper had to be diluted in a water and sugar solution 500 times for tasters to no longer taste the spiciness of the Pepper.

A SHU is then allocated to the Pepper depending on the dilution required so the human taste testers can no longer taste the spiciness of Pepper.

If the number of dilutions is less, the rating is lower, and the Pepper is less spicy.

Therefore, the Scoville Test depended on the sensibility of the human taste-testers.

Today, there is a more sophisticated method of determining the spiciness of Pepper.

The High-performance liquid chromatography (HPLC) or the Gillette Method measures the volume of capsaicinoids in Pepper without depending on the sensibility of human taste-testers.

The Scoville Scale is used to determine Pepper’s amount of pure capsaicina content. The scale can detect up to 16,000,000 SHU.

SHU is the only unit of measure that is internationally recognized to rank the spiciness of the Pepper scientifically.
